Water filtration is an often-overlooked aspect of food service equipment. Unfiltered or improperly filtered water can have negative effects on every aspect of your food service operation. It is important in food service so that water is not only safe but tastes great. Water softener (ion exchange) adds salt to the water. Phosphates add chemicals to the water. Chlorine has been used to disinfect water since the early 1900s. Some customers will not notice the taste of chlorine, but others will, and chlorine can drastically alter the taste of post-mix beverages and coffee.
